Mixing up some Bacon, Eggs, Ham, Spinach, Onion, Bell peppers, Mushrooms, and Yams this dish is perfect for breakfast, but delicious anytime. Talk about a hearty meal!

Recipe for Stacie Tovar’s Egg Bake:

Yield: 9 servings

Ingredient List for Bok Choy base:
12 eggs
1 pound bacon, diced into small chunks
1 pound ham, diced
8oz. Mushrooms, sliced
1 onion, diced
1 red bell pepper, diced
8oz. Spinach
3 pounds sweet potatoes, peeled and cut into ¼” strips lengthwise
1oz. Grass-fed butter
2 teaspoons Veggie Victory
2 teaspoons Ga Ga Garlic
Preparation Instructions:
Preheat the oven to 350°F.
Place a large saute pan over medium heat. Add diced bacon, cook, until crispy, remove from pan and allow to cool.
Grease bottom of a 9×12 baking dish with butter. Layout sweet potatoes to cover the bottom of the dish in one even layer.
Add onion, mushrooms, bell pepper, ham and bacon to a mixing bowl and mix together. Place half the mixture on top of the sweet potato layer and cover with half the spinach.
Add another layer of sweet potato, the remaining bowl mixture and the rest of the spinach. Add one more layer of sweet potato.
In a smaller mixing bowl, crack eggs and whisk with Veggie Victory and Ga Ga Garlic.
Pour egg mixture over the top. Cover with a layer of plastic wrap and a layer of foil. Place in the oven. Cook for one hour or until the top layer of sweet potatoes is fork-tender.
Plating/Portioning Instructions:
Slice into 9 servings. Plate and enjoy!
