Breakfast Burrito (AIP | Gluten Free | Dairy Free | Paleo)

One of the ways I made AIP easier for me was to renovate recipes I already loved. Breakfast burritos were an easy grab and go meal before I went AIP. This is my renovation of that recipe.

Breakfast Burrito
4-6 Burritos
1 Large Sweet Potato, cubed
1 Large Onion, sliced
1 TBS Avocado Oil

1lb Ground Pork
1.5 TBS Breakfast Sausage Seasoning
2 TBS Nutritional Yeast
1 Cup Frozen Kale

Tortilla

3/4 Cup Cassava Flour
1/4 tsp Sea Salt
2 TBS Oil
1/3 Cup Warm Water

1) Roast sweet potatoes and onion on 375F for 25-30 minutes until
golden and cooked though.
2) While roasting sweet potatoes brown pork.
3) Add seasonings and cook for 2-3 minutes.
4) Add yeast and kale mix well.
5) Add sweet potato mixture, mix well set aside.

Make tortillas:
1) Whisk together cassava flour and salt. Add the oil and warm water
until a nice dough begins to form. The dough should not be dry or
too wet and sticky.
2) Knead the dough until smooth.
3) Divide into 4 dough balls.
4) Roll each dough ball between two pieces of parchment paper until
thin or use a tortilla press.
5) Heat skillet over medium high heat. Place tortilla in the
skillet. Wait for the air bubbles to form (approx. 1 minute) and
then flip. Cook for about 1 minute and remove to wire rack to
cool.

Assemble
1) Fill tortilla with about 1/4-1/2 cup sausage mixture (depending
on the size your tortilla is).
2) Fold one side over, tuck end in and roll up.

Serve and Enjoy.

Note: You can make these cheesier by using 1/2 cup shredded AIP cheese.:
