  • 1-1/2 cup pumpkin puree
  • 1/4 cup applesauce
  • 1/4 cup full-fat coconut milk
  • 1 tsp. vanilla
  • 1 cup almond meal
  • 1/2 cup coconut flour
  • 1/2 tsp. pumpkin pie spice

Preparation

  1. Preheat the oven to 350 F.
  2. In a bowl, combine the pumpkin puree, applesauce, coconut milk, and vanilla until well mixed.
  3. Gently add the coconut flour and almond meal while whisking.
  4. On a parchment-lined or lightly greased baking sheet, drop large spoonfuls of the cookie mixture, then flatten with a fork.
  5. Place the cookie sheet in the oven and bake for 20 to 25 minutes.
