  • 1 to 2 skirt steaks;
  • 2 tbsp. Cajun spice;
  • 1/4 cup coconut oil;
  • 1/4 cup apricot preserves;
  • 1/3 cup orange juice;
  • 1/4 cup coconut aminos;

Preparation

  1. Combine the coconut oil, apricot preserves, orange juice, coconut aminos, and 1 tbsp of Cajun spice in a saucepan.
  2. Bring the mixture to a light boil and simmer for 8 to 10 minutes.
  3. Pulse the apricot sauce with an immersion blender until smooth and set aside.
  4. Preheat the grill to high heat.
  5. Season the steak with the remaining Cajun spice.
  6. Brush the steaks with the apricot sauce.
  7. Grill the steaks on the preheated grill for 6 to 8 minutes per side.
  8. Let the steak rest for 2 to 3 minutes; serve with the remaining apricot glaze.
