Cauliflower Hash With Eggs Recipe

Ingredients

  • 1 tbsp. butter or ghee
  • 1 red onion, finely chopped
  • 2 garlic cloves, thinly sliced
  • 1/2 tsp. ground coriander
  • 1 tsp. smoked paprika
  • 1 head cauliflower, cut into small florets
  • 1/2 cup chicken stock
  • 3 tbsp. chopped parsley
  • Eggs, cooked to your preference
  • Sea salt and freshly ground black pepper

Preparation

  1. Melt the butter or ghee in a large frying pan and add the onion and garlic.
  2. Sauté until soft and fragrant, then add the spices. Stir to coat the onion in the spices and add the cauliflower.
  3. Pour in the chicken stock and cook for 10-15 minutes until the stock has been absorbed and the cauliflower is cooked.
  4. Season to taste, and add the parsley. Stir well.
  5. Serve the cauliflower hash topped with an egg cooked to your preference.
