Baked Zucchini Rounds 👅!

We picked up a giant 3lb zucchini from @rancho.tranquilo and made delicious baked zucchini rounds. This is a great side dish, snack, or appetizer. It’s grain-free, gluten-free, and made with simple ingredients. I’m a huge fan of zucchini, are you?

Ingredients:

⏺ 1/2 large @rancho.tranquilo zucchini (1.5 lbs)
⏺ 2 @vitalfarms eggs.
⏺ 3/4 cup almond flour.
⏺ 1 Tbsp @ottosnaturals cassava flour.
⏺ 1/4 tsp Himalayan pink salt.
⏺ 1 1/2 tsp @simplyorganicfoods paprika.
⏺ 1/2 tsp @simplyorganicfoods garlic powder.
⏺ A pinch of love 💚!

Let’s Cook 👩‍🍳 & dance 💃:

1️⃣ Preheat oven to 425°F. Line a baking sheet with parchment paper and set it aside.
2️⃣ Wash zucchini. Cut off the ends of the zucchini and toss them into your waste bin.
3️⃣ Slice zucchini into even thin rounds (I remade this recipe and the thin ones were crispier.) You can extract some of the moisture with a paper towel.
4️⃣ In a mixing bowl whisk the eggs.
5️⃣ In a separate mixing bowl add the flour, salt, paprika, garlic, and love. Mix together until well combined.
6️⃣ Dip zucchini rounds into the egg wash, then dredge them in seasoned almond flour. Make sure they are well coated.
7️⃣ Place the zucchini rounds on the baking sheet.
8️⃣ Bake at 425 F for 25-30 minutes (flip halfway.) Baking time may vary depending on the thickness of the zucchini rounds.
9️⃣ Remove from the oven. Serve zucchini rounds with ranch, ketchup, buffalo sauce, or your favorite dipping sauce.
