Beef Rouladen – Beef Rolls

Paleo Beef Rolls

One of the great things about beef rouladen is that it is a versatile dish that can be served in a variety of ways. For a traditional German-style meal, serve the rouladen with roasted potatoes and red cabbage. Of course, everything is better with these paleo mashed potatoes. Alternatively, you could serve it with a side of cauliflower rice or zucchini noodles for a lower-carb option. To add more nutrients to the dish, serve with this sauteed zucchini and carrot dish.

If you’re looking for a way to switch things up, try adding some vegetables to the filling. Carrots, onions, and mushrooms are all great options that add both flavor and nutrition to the dish. Ingredients

  • 12 slices thin beef topside or round roast
  • 1 onion, thinly sliced
  • 8 sour pickles, sliced thinly
  • ¼ cup Dijon mustard
  • 12 slices bacon (uncured/sugar-free)
  • ⅓ cup beef stock
  • Cooking fat of choice

How to Make Paleo Rouladen

Preheat the oven to 300°F/150°C.

On a clean, flat surface, separate and lay the thinly sliced beef pieces out. On top of each piece of beef, lay a slice of bacon lengthwise in the middle.

Then, divide the onion and pickle slices over the bacon slices on top of the beef.

Once in place, spread mustard on top and then roll the rouladen. It will be open on both ends but stuffed in the middle. If needed, use toothpicks or kitchen twine to hold them in rolls.

Now, in a large skillet, heat your preferred cooking fat over medium heat. Brown the rouladens on each side, for 1 minute, then transfer into a roasting pan.

After all of the beef rouladen is in the pan, pour the beef broth into the pan, cover it, and bake for 1 hour.

Remove from the oven and let stand for 5 minutes before serving. Be careful to remove all twine or toothpicks before serving.

Ingredients  

  • 12 slices thin beef topside or round roast
  • 1 onion thinly sliced
  • 8 sour pickles sliced thinly
  • ¼ cup Dijon mustard or homemade mustard
  • 12 slices bacon uncured/sugar-free
  • cup beef stock or chicken
  • Cooking fat beef tallow, lard, or bacon grease

Instructions 

  • To begin, preheat your oven to 300°F/150°C.

  • Lay the thinly sliced beef pieces out on a clean, flat surface. On top of each slice of beef, place a slice of bacon lengthwise down the center.

  • Divide the onion and pickle slices between the bacon slices on top of the beef, making sure they are evenly distributed.

  • Spread mustard over the filling, then roll up the beef slices tightly. The rouladen will be open on both ends but stuffed in the middle. If needed, use toothpicks or kitchen twine to hold them in place.

  • Heat your preferred cooking fat in a large skillet over medium heat. Brown the rouladen on each side for about a minute, then transfer them to a roasting pan.

  • Once all the rouladen are in the pan, pour beef broth over them, cover the pan, and bake for one hour.

  • When the rouladen is finished baking, remove the pan from the oven and let it sit for five minutes before serving. Before serving, make sure to remove all twine or toothpicks from the rouladen.

Notes

  • Ask your butcher to slice the beef topside thinly when purchasing. 
  • Use sour or fermented pickles such as Bubbie’s or Grillo’s. 
  • You can also spread the mustard onto the meat before laying on the bacon and vegetables.
