Not only is this simple paleo sausages dish absolutely delicious, but it also fits perfectly into a paleo- or keto- diet. The use of parsnips instead of traditional mashed potatoes keeps this dish low-carb, while still providing a creamy and satisfying texture. And with the option to choose between beef or pork sausages, you can tailor this dish to fit your dietary needs and preferences.

If you’ve never tried parsnips before, you’re in for a treat. These root vegetables have a slightly sweet and nutty flavor, making them a perfect complement to the savory flavor of the sausages and mushrooms.

If you don’t care for parsnips, you could easily make this mashed cauliflower to serve with the sausages. Of course, if you don’t need to have a keto side, you could serve up paleo pesto mashed potatoes.

Ingredients

  • 12 pork sausages, or beef
  • 2 garlic cloves, minced
  • 2 lbs parsnip, chopped
  • 5 tablespoon cooking fat, beef tallow, lard, or bacon grease
  • 1 lb button mushrooms
  • ½ cup broth
  • 2 tablespoon fresh oregano, chopped
  • Pinch of nutmeg
  • Salt and black pepper, to taste

How to Make Paleo Sausages with Parsnip Mash and Mushrooms

In a large stockpot, cover the parsnips with water and bring to a boil over medium heat. Once boiling, cook for 15 minutes, or until softened.

Drain the parsnips, discarding the liquid. Then, to the pan, add 3 tablespoons of the cooking fat, broth, nutmeg, salt, and black pepper. Mash the mixture until smooth, taste, and season additionally if needed. Cover and set these aside to keep warm.

In a large skillet, add the remaining cooking fat over medium heat. Add the sausages and cook for 15 minutes, turning regularly, until they are cooked through.

Remove the sausages from the pan and set them aside, then add the mushrooms to the same pan along with the garlic. If needed, add an additional 1 or 2 teaspoons of cooking fat.

Cook the mushrooms, stirring regularly, until softened and browning. Then add in the oregano and stir to combine.

Serve the sausages with mashed parsnips and mushrooms. Add pan drippings to the top if desired.

Ingredients  

  • 12 pork sausages or beef
  • 2 garlic cloves minced
  • 2 lbs parsnip chopped
  • 5 tablespoon cooking fat beef tallow, lard, or bacon grease
  • 1 lb button mushrooms
  • ½ cup broth
  • 2 tablespoon fresh oregano chopped
  • Pinch of nutmeg
  • Salt and black pepper to taste

Instructions 

  • Start by boiling the parsnips for around 15 minutes or until soft. Drain the water and add 3 tablespoon of cooking fat, a pinch of nutmeg, salt, pepper, and broth, then mash with a potato masher or food processor. Keep the mashed parsnips covered to keep them warm.

    2 lbs parsnip, 5 tablespoon cooking fat, ½ cup broth, 2 tablespoon fresh oregano, Pinch of nutmeg, Salt and black pepper

  • Heat a large skillet over medium heat and cook the sausages with 2 teaspoon of cooking fat for about 15 minutes, turning occasionally.

  • After setting the sausages aside, add garlic and mushrooms to the skillet with the remaining cooking fat and cook until browned, around 5 minutes. Add chopped oregano to the skillet and stir.

  • Serve the mashed parsnips with the sausages, mushrooms, and dripping.

Notes

  • Use any preferred sausage that is paleo-friendly and/or keto-friendly.  Read the packaging to verify no additional sugar or sweeteners have been added to the sausage. 
  • Replace mashed parsnips with mashed cauliflower if you prefer. 
  • Button, baby Bella, or cremini mushrooms can be used interchangeably in this recipe.
