Chocolate Macadamia Nut Bliss Balls
1 cup Macadamia Nuts
2 tbsp Cocoa Powder
1 -3 tbsp Coconut Sugar (depending on how sweet you want it)
1 scoop Collagen Peptides (I love this brand: https://www.perfectsupplements.com/Perfect-Hydrolyzed-Collagen-p/ps-collagen.htm?Click=89203)
Pinch of Sea Salt (unless your macadamia nuts were salted)
Mix in a food processor or blender until the mixture easily sticks, and then roll into 6-8 walnut-sized balls. Store in the fridge for up to a week.
Chocolate-Covered Mandarin Oranges
1/2 of a 3 oz Chocolate Bar (I like 85% Dark)
2 Mandarin or Cutie Oranges
Break the chocolate into pieces and put into the microwave for about 45 seconds, stirring every 15 seconds to prevent burning. (Alternatively you can melt in a pan on the stove over low heat, stirring frequently.)
Peel the oranges.
Once the chocolate is melted, dip the oranges into the chocolate and lay on a piece of parchment paper to harden. Store in the fridge for up to 4 days.
