Chocolate Buckwheat Breakfast Pudding // vegan + paleo option

Ingredients
1/2 cup (90g) buckwheat
1-2 tbsp maple syrup (or 2 pitted medjool dates)
2-3 tbsp cocoa powder
1/4 tsp salt
1/2 tsp cinnamon (optional)
~1/2 cup canned coconut milk, to blend
Paleo Option: Replace buckwheat with 1/4 cup (35g) walnuts + 2 tbsp (15g) chia seeds + 2 tbsp (15g) hemp seeds

1) Soak the buckwheat (or nuts/seeds) overnight.
2) Drain and rinse thoroughly.
3) Blend everything in the HUROM Hexa Power High Speed Blender until smooth, adding coconut milk as needed.
4) Serve warm, or chill to thicken.
5) Top with berries, coconut whipped cream, cacao nibs, etc. Enjoy!
